Fennel salad with orange fillets and whipped cream

Ingredients for 4 servings:

  • 2 bulbs fennel, large
  • 3 oranges
  • 250 ml cream, whipped
  • 1 tsp, heaped mustard or orange mustard
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Trim and finely slice the fennel bulbs. Peel and fillet 2 oranges thoroughly (including the white part), then halve the fillets. Juice the third orange. Whisk the heavy cream with the orange juice, mustard, salt, and pepper into a sauce. Pour over the fennel slices and orange segments and mix thoroughly. Enjoy!
