Festive meat and potato salad

Ingredients for 2 servings:

  • 300 g beef, cooked
  • 3 large potatoes, boiled
  • 4 eggs, hard-boiled
  • 6 gherkins
  • 1 can peas
  • 1 tube(s) mayonnaise
  • 5 tbsp cucumber juice
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes

Chop the beef into small pieces. Dice the potatoes and eggs. Chop the gherkins into small pieces. Mix all ingredients well and let it sit for 2 hours. This is an authentic recipe for the salad, which is popular in Russia and the CIS countries and traditionally prepared for New Year’s Eve. For a nice color, you can add a boiled carrot. Beef can also be substituted with meat or poultry sausage.
