Ingredients for 4 servings:
- 200 g feta cheese
- 75 g dried tomatoes
- 1 handful of arugula

Wash the arugula, trim off any thick, leafless stem ends, and roughly chop the rest. Roughly chop the sun-dried tomatoes, depending on their size. Crumble the feta cheese slightly. Place all ingredients in a blender and blend with an immersion blender until smooth. I always add a splash of water to make it easier. The quantities can, of course, be adjusted to suit your taste; I find this is the best combination for the spread.
