Ingredients for 1 servings:

  • 200 g cream cheese, Brocciu – Corsican, alternatively Ricotta
  • ½ lemon(s), untreated
  • 3 eggs
  • 120 g sugar
  • 1 pinch of salt
  • 20 g butter

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Corsican cheesecake

Preheat the oven to 180°C. Grease a cake or tart pan. Drain the brocciu or ricotta. Using a paring knife, scrape a 5cm strip of lemon zest, dip it in a pot of boiling water, and blanch for 3 minutes. Pat dry and then finely chop. Separate the eggs. Mix the sugar with the egg yolks and beat until frothy. Then carefully fold in the cheese and lemon zest. Beat the egg whites with a pinch of salt until stiff peaks form and carefully fold into the egg yolk mixture, taking care not to allow it to collapse. Pour the batter into the cake pan. Bake for about 35 minutes. Do the skewer test; if the batter is still sticky, bake the cake for a few more minutes.
