Fiery apple and tomato soup

Ingredients for 8 servings:

  • 1 garlic clove(s)
  • 500 g onion(s)
  • 500 g apples, pitted, peeled
  • 1 large can/n tomatoes, pureed and 1 small can
  • 1 vegetable stock cube
  • Honey
  • 1 chili pepper(s), fresh, cleaned and chopped or dried, crushed
  • salt and pepper
  • chili powder
  • oil
  • possibly crème fraîche or yogurt

Finely chop the garlic and onions and fry them in a little oil with the chili. Pour in 500 ml of water, add the stock cube and the apples. Simmer until the apples are soft. Purée everything, add the passata, and purée again. Season to taste with honey, chili powder, salt, and pepper. Add more liquid if desired (water with stock cube or apple and/or tomato juice). Then season again carefully; the soup should taste spicy, sweet, and fruity. At the table, consider serving it with crème fraîche or yogurt; if the soup is too spicy for someone, you can use this to tone it down.
