Ingredients for 1 servings:

  • 1 tbsp olive oil, mild
  • 2 tbsp oregano, dried
  • 1 tsp rosemary, fresh, finely chopped or dried and ground
  • 1 tsp sweet paprika powder
  • ½ tsp dried coriander, or twice as much fresh
  • 1 tsp salt
  • 1 pepper, red, fresh
  • 4 garlic cloves

Deseed the peppers and then finely puree them with all the other ingredients in a mortar and pestle or blender. This spice paste makes a wonderful base for adding a Mediterranean touch to many dishes. You can use it to marinate meat and fish, pickle peppers and other antipasti, or even make a delicious cheese spread. Don’t be surprised: The paste tastes extremely intense on its own!
