Fiery chicken stew

Ingredients for 4 servings:

  • 4 chicken thighs, alternatively a whole chicken
  • 800 g potatoes, peeled, quartered
  • 500 g onion(s), cut into wedges
  • 2 bell peppers, roughly diced
  • 5 garlic cloves, peeled
  • 5 chili peppers (Piri Piri)
  • 2 tbsp oil (seasoning oil)
  • salt and pepper
  • Herbs of Provence
  • 500 ml broth

Working time approx. 35 minutes; Total time approx. 35 minutes

Preheat the oven to 200°C (top/bottom heat). Rub the chicken thighs with salt, pepper, and the seasoning oil (cut a whole chicken into 6 pieces and season). Place everything on a large baking sheet along with the prepared vegetables. Pour in 500 ml of broth and sprinkle with the herbs. Place in the oven and bake for approximately 60-90 minutes. Baste with broth frequently during the cooking time. Serve hot. Tip: If you have any broth left over at the end of the cooking time, refine it with crème fraîche or sour cream and pour it over the potatoes when serving.
