Fiery Midnight Soup

Ingredients for 4 servings:

  • 250 g bratwurst, coarse
  • 250 g onion(s)
  • 200 g potatoes, floury
  • 400 g bell pepper(s), red
  • 3 tbsp oil
  • Salt
  • Pepper, black from the mill
  • 1 piece(s) pepper(s), dried
  • ½ tsp caraway seeds
  • ½ tsp marjoram, shredded
  • 1 tbsp paprika powder, sweet
  • 2 tbsp tomato paste
  • 750 ml beef broth or vegetable broth
  • 1 tbsp parsley, chopped
  • 2 tbsp sour cream or crème fraîche

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Briefly blanch the sausages and cut into thin slices (removing the skin if necessary). Wash the other ingredients and cut everything into small cubes. Brown the sausages and onion in oil. Then add the peppers and potatoes and mix everything together. Season with salt and pepper and add the remaining spices. Continue to fry everything for about 5-10 minutes. Add the tomato paste and meat broth, cover, and simmer for another 45-50 minutes. Let stand briefly, then stir in the parsley. Just before serving, add the sour cream or crème fraîche to the soup. Serve with fresh baguette or farmhouse bread.
