Fiery pepper jam from Rosinenkind

Ingredients for 4 servings:

  • 1 kg red bell pepper(s), cleaned and diced
  • 5 onions, peeled and diced
  • 5 garlic cloves, cleaned and diced
  • 250 ml white vinegar
  • 200 g white sugar
  • 100 g brown sugar
  • 5 chili peppers, fresh and chopped
  • 2 tbsp olive oil
  • 1 tsp salt

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Heat the olive oil in a saucepan, sauté the diced onion until translucent, add the bell peppers, and sauté. Now add the garlic (don’t let it brown, or it will become bitter). Deglaze with the vinegar, add the remaining ingredients, and simmer until thickened. If you like, you can blend it again with an immersion blender towards the end. Sterilize twist-off jars and immediately fill with the mixture, sealing the jars.
