Put 50 ml of cream and the sugar into a non-stick pan and heat gently until the sugar has dissolved in the cream. Then add the fig and 20 ml of Amaretto, simmer for 5 minutes, stirring constantly. Now add the finely chopped banana and the quartered raisins with 40 ml of Amaretto, and simmer for 5 minutes, stirring continuously. Add a little salt and ground Bourbon vanilla, then pour in 50 ml of water and 50 ml of cream. Bring to a boil for about 3 minutes, then add another 20 ml of Amaretto and bring to a boil again. This sauce is excellent served with vanilla pudding.
