Ingredients for 1 servings:

  • 100 g fig(s), dried
  • 2 tbsp flour
  • 2 eggs
  • 175 g brown sugar
  • 1 packet of vanilla sugar
  • 1 tsp, heaped gingerbread spice
  • ½ lemon(s), grated peel
  • ½ bottle of rum flavoring
  • ½ tsp baking powder
  • 150 g ground almonds
  • 100 g hazelnuts, ground
  • 40 baking wafers
  • Chocolate coating
  • 40 almonds, as needed

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Recipe for 40 gingerbread cookies. Finely dice the figs and mix with 1 tablespoon of flour. Separate the eggs. Whisk the egg yolks, 100g of sugar and vanilla sugar, the gingerbread spice, lemon zest, and rum flavoring until frothy. Mix 1 tablespoon of flour with the baking powder and stir in the almonds, nuts, and figs. Whisk the egg whites until stiff peaks form, gradually adding 75g of sugar and folding in the mixture thoroughly. Spread the gingerbread mixture onto the wafers. Place in the oven at 150°C (convection oven) and bake for about 20 minutes. Decorate with chocolate coating and almonds, or as desired.
