Figs with Goat Cheese and Sherry Caramel

Sherry caramel

  • 6 tsp Goat cream cheese
  • 50 ml Sherry dry
  • Black pepper from the mill
  • 100 ml Sherry dry
  • 3 tbsp Sugar
  • 2 tsp Thyme leaves
  1. Preheat the oven to 220 ° C. Remove the stalk from the figs and cut the fruits crosswise so deep that they can be unfolded like flowers. Place the figs in a baking dish, sprinkle with 25 ml of sherry and bake in the hot oven (center) for 15 minutes. In the meantime, drizzle with another 25 ml of sherry.
  2. Let the sugar caramelize in a saucepan over medium heat. Deglaze with 100 ml sherry. Stir in the thyme, simmer uncovered for 3-5 minutes, until the whole thing has thickened.
  3. In the meantime, take the figs out of the oven, grind some pepper over them, let the fruits rest for 5 minutes. Put 1 teaspoon of fresh goat’s cheese in each fig and pour the caramel over it. Garnish with thyme leaves and serve lukewarm.
