  • 100 g butter
  • 2 eggs
  • 100 g beef tongue(s), cooked, smoked
  • 100 g ham (pressed ham)
  • 100g salami
  • 100 g sausage, spicy
  • 100 g cheese (Edam)
  • 1 tbsp mayonnaise
  • ½ bunch parsley
  • 2 cucumbers (delicatessen gherkins)
  • 10 pistachios
  • Salt
  • pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Hard-boil the eggs, rinse, peel, finely chop the egg whites, and strain the yolks through a sieve. Wash and finely chop the parsley. Medium-finely dice the smoked tongue, pressed ham, salami, spicy sausage, Edam cheese, and gherkins. Remove the pistachios and roughly chop them. Cream the butter until fluffy, add the strained egg yolks and mayonnaise, and stir until smooth. Add the parsley and pistachios; season the mixture with salt and pepper. Then add the diced tongue, pressed ham, salami, spicy sausage, cheese, and gherkins and mix everything gently. Cut off the ends of the sandwich roll and hollow it out, leaving a 1 1/2 – 2 cm thick edge. Then, using a spoon, fill it with the filling, assemble the roll, wrap it in cling film, and let it set in the refrigerator for at least an hour. Finally, cut the roll into approximately 1 1/2 cm thick slices. Serve with a cold glass of beer.
