Tramezzini with shrimp

Ingredients for 4 servings:

  • 200 g prawn(s), cooked peeled
  • 2 tomatoes
  • ½ bunch basil
  • 100 g mascarpone
  • 50 g mayonnaise for salads
  • 4 lettuce leaves
  • 8 slices of toast
  • Salt and pepper, black from the mill

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Tramezzini with scampi

Cut the shrimp into small cubes. Wash and halve the tomatoes. Remove the juice and seeds, and cut the tomatoes into small pieces. Cut the basil into strips. Mix the mascarpone with the mayonnaise. Stir in the shrimp, tomatoes, and basil, and season with salt and pepper. Wash the lettuce leaves and pat dry with a paper towel. Cut out the thick ribs in the middle. Cut half of the bread diagonally into triangles. Top the remaining bread with a lettuce leaf each, spread the shrimp mixture on top. Place the triangles on top, press down gently, and cut diagonally all the way through.
