Fillet toast with hollandaise and apricots

Ingredients for 4 servings:

  • 1 pork fillet(s)
  • 2 tbsp sunflower oil
  • 1 can of mushrooms
  • 1 tbsp butter
  • 8 slices of toast
  • 250 ml hollandaise sauce
  • 1 can apricot(s)
  • 2 tbsp cheese, grated
  • salt and pepper

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Slice the fillet and fry in hot oil. Drain the mushrooms well and add them to the fillet. Season with salt and pepper. Add the butter and reduce the heat. Toast the slices of bread (depending on how dark you like them) and place them on a baking sheet. Heat the hollandaise sauce. Drain the apricots, halve them, and place them on the slices of bread. Then scatter the hot mushrooms and fillet pieces over the slices. Sprinkle with grated cheese and place in the oven at 200°C for 5 minutes (or until the cheese is melted). Place the slices of bread on preheated plates and pour the hollandaise sauce over them. Serve immediately.
