Filling pumpkin and potato stew

Ingredients for 4 servings:

  • 600 g potatoes, peeled and diced
  • 600 g pumpkin(s), Hokkaido, pitted and cut into pieces
  • some rapeseed oil
  • 100 g bacon, diced
  • 2 onions, diced
  • 1 bunch soup greens, cleaned and chopped
  • 1 liter of broth
  • Salt
  • pepper
  • nutmeg
  • cumin
  • Chili, ground
  • e.g. Worcestershire sauce or Maggi
  • e.g. sausages, fine or Mettwurst in slices or smoked pork cooked and cut into pieces
  • Parsley, chopped or dried

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Sauté the bacon, onion, and vegetables in hot fat. Add the potato pieces and, a little later, the pumpkin pieces, and pour in the broth. Simmer until soft, about 20-30 minutes. Season with all the spices and puree to taste. Heat sausage slices or pieces of meat in the broth, if desired. Serve garnished with parsley.
