Fine butter spaetzle casserole

Ingredients for 6 servings:

  • 500 g Flour, Universal
  • 125 g butter or margarine
  • 2 eggs
  • 400 ml milk
  • 1 tsp salt
  • 1 m.-sized onion(s)
  • 200 g ham
  • 50 ml olive oil
  • 250 ml whipping cream, or Cremefine for whipping
  • 4 eggs
  • salt and pepper
  • Parsley
  • Parmesan

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 5 minutes

Sift flour into a bowl. Melt butter, add to the flour along with eggs, milk, and salt. Whisk everything into spaetzle dough. Press into boiling salted water and bring to a boil briefly. Strain. Chop the onion and ham and fry in olive oil. Pour in whipped cream or Cremefine for whipping and bring to a boil. Mix with the cold spaetzle. Add the egg yolk and chopped parsley, season with salt and pepper, and mix well. Whisk the egg whites and fold into the spaetzle mixture. Pour into a greased baking dish and sprinkle with grated Parmesan cheese. Bake uncovered in a preheated oven at 160°C (convection oven) for about 30 minutes.
