Ingredients for 2 servings:
- 200 g onion(s)
- 200 g carrot(s)
- 150 g apples
- Oil for frying
- 1 tbsp, heaped curry powder
- ½ tsp cumin powder
- ½ tsp turmeric
- ½ tsp garam masala
- 200 ml coconut milk
- 200 ml broth, strong
- 100 ml orange juice
- 50 ml cream
- 60 g trail mix, exotic
- some lime juice
- some parsley, freshly chopped
- Salt and pepper, freshly ground
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour
sprinkled with trail mix
Peel the onions and carrots and chop them into smaller pieces along with the apples. Sauté them in a pan with a little oil, add the spices, and fry briefly. Deglaze with coconut milk, broth, orange juice, and cream. Simmer everything until tender, about 30 minutes. In the meantime, finely chop the trail mix and mix with the parsley. Once everything is tender, puree it in a blender. Season to taste with lime juice, salt, and pepper. Serve on plates and sprinkle with the trail mix. This serves 2 soup bowls or 4 soup bowls.
