Ingredients for 5 servings:
- 500 g pasta, e.g. penne
- 500 g minced meat of your choice
- 1 bunch of spring onions
- 2 large carrots
- 1 can of corn (330 g)
- 500 g tomatoes, pureed
- 200 g mozzarella, grated
- 2 tbsp tomato paste
- e.g. salt and pepper
- n. B. Herbs, Italian (frozen)

Simple and affordable
Cook the pasta according to the package instructions to the desired doneness and transfer to a sufficiently large casserole dish. For the sauce, slice the spring onions lengthwise and then into thin rings. Quarter the carrots and slice them thinly. Drain the corn. Fry the minced meat with the tomato paste until crumbly. Add the vegetables, fold in, and sauté briefly. Then add the passata, stir in, and simmer with the lid on until the carrots are tender (depending on the desired consistency; they will continue to cook a little later in the oven). Season the sauce with salt, pepper, and herbs, pour over the pasta, and fold in a little. Sprinkle everything with the mozzarella and bake in the oven at 200°C until the cheese is nicely browned.
