Fine Tomato Sauce

Ingredients
 

  • 450 Fresh tomatoes
  • 1 Diced onion
  • 3 tbsp Olive oil
  • 1 tbsp Tomato paste
  • 1 tbsp Vegetable extract (see recipe)
  • 10 g Sugar
  • 100 ml Red wine
  • 200 ml Cream
  • 300 ml Water
  • 20 g Chopped ginger
  • 1 tbsp Processed cheese
  • 1 tsp Sweet paprika powder
  • Garlic paste (see recipe)
  • Salt
  • Black pepper from the mill
  • Hot rose paprika
  • Cumin
  • Flour butter (see recipe)
  • Rubbed oregano
  • Chopped basil

Instructions
 

  • Chop the onion into small pieces. Heat the olive oil in the pan and sweat the diced onion lightly brown, roast the tomato paste and vegetable extract "vegetable extract".
  • Now deglaze with the red wine and let it reduce. Put the red wine and vegetable reduction in a bowl.
  • Now add a little olive oil to the pot and sprinkle in the sugar while caramelizing, halve the tomatoes and place the cut side in the caramelized sugar and roast. Add the chopped ginger.
  • After roasting the tomatoes, add the red wine and vegetable reduction and pour water over it, sprinkle in the sweet paprika powder and simmer for about 20 minutes.
  • After simmering, purée the sauce finely with a blender and then strain it through a sieve.
  • Put the sauce back on the stove, bring to the boil again and then pour in the cream.
  • Now add all the spices, the processed cheese and the garlic paste "Garlic paste" and season to taste.
  • Depending on the consistency, stir in the flour butter "Flour butter (Beurre manié)". Finally stir in a little oregano and sprinkle with chopped basil.
