Finnish Nut Cake

The perfect finnish nut cake recipe with a picture and simple step-by-step instructions.

  • 2 a cup Whipped cream
  • 2 tablespoon Flour
  • 200 g Sugar
  • 0,5 teaspoon Baking powder
  • 1 tablespoon Cocoa
  • 1 tablespoon Instant cafe e.g. Nescafe
  • 5 medium sized Eggs
  • 200 g Ground hazelnuts
  1. Separate the 5 eggs, beat the egg white to the egg whites and add 200g sugar. Now carefully fold in the egg yolk, stir in 2 tablespoons of flour and 1/2 teaspoon of baking powder, as well as the 200g of hazelnuts, Cover a baking sheet with baking paper and distribute the dough evenly and bake at 200 degrees for 20 minutes. Then divide the cake into four equal pieces while still warm and allow to cool. For the filling, whip 2 cups of whipped cream until stiff and mix well with 3 tablespoons of sugar, 1 tablespoon of cocoa and 1 tablespoon of Nescafe. Now place the first piece of cake on a surface and spread the filling, place the next piece on top and alternately stack the cake and the filling mixture on top of each other. Finally, brush the outside of the entire cake tower with the filling compound and decorate with a fork. IMPORTANT, make sure that there is enough cream for the outsides.
