Finnish oat cookies

Ingredients for 4 servings:

  • 50 g butter
  • 60 g oat flakes
  • 125 g sugar
  • 1 tbsp flour
  • 1 tsp baking powder
  • 1 egg(s)

Kauralastut – simple and delicious!

Mix the oats, sugar, flour, and baking powder together in a bowl. Melt the lukewarm butter and add it to the mixture. Mix well. Add the egg and mix vigorously until a smooth dough forms. Using a teaspoon, drop small heaps of dough onto a baking sheet lined with baking paper. Make sure there are plenty of spaces between them, as the dough will spread out very flat (about 9 heaps per sheet). Bake at 225°C for about 6 minutes until golden brown. Be careful: the cookies will brown too quickly! Allow to cool first and then remove from the baking sheet. The cookies must be firm before you stack them. The dough makes about 30 cookies. Tip: You can also cool the cookies on a rolling pin and let them firm up; this will give them a nice, curved shape. The cookies are also perfect for decorating and as an accompaniment to various desserts, such as crème brûlée.
