Popular yeast pastry from Finland, for about 25 pieces

Heat the milk to about 35°C and dissolve the yeast in it. Add the sugar and cardamom and mix everything well. Gradually add the flour and knead into a soft and sticky dough. Finally, stir melted butter or oil into the dough. Cover the dough and let it rise for about 1 hour, until it has doubled in size. Mix all the ingredients for the filling. Knead the risen dough well and roll it out into a rectangular sheet about 1 cm thick. Spread the filling over the dough and roll it up from the wide side. Cut the dough into pieces, each with a narrow and a wider side (see photo). The shorter part should be about 2 cm long. Press each piece into “ears” using your two little fingers (see photo). Place each piece on a baking sheet and let it rise for about 15 minutes. Preheat the oven to 225°C. Brush the “ears” with beaten egg and garnish with sugar. Bake for about 10 minutes until golden brown. Enjoy the slaps warm from the oven with cold milk or coffee.
