Ingredients for 1 servings:

  • 4 tsp paprika powder, smoked, if available
  • 2 tsp cayenne pepper
  • 2 tsp onion granules
  • 1 tsp chili flakes
  • 1 tsp, leveled cumin powder, use sparingly
  • 1 tsp curry
  • 1 tsp marjoram, shredded
  • 1 tsp thyme, dried
  • 1 tsp black pepper from the mill
  • ½ tsp white pepper from the mill
  • ½ tsp cinnamon powder
  • 3 tsp salt or 2 tsp salt and 1 tsp smoked salt
  • 2 tsp brown cane sugar
  • possibly garlic, fresh
  • possibly mustard
  • lemon juice

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

Barbecue spice or marinade base

Mix the dry ingredients together; this makes about a small jam jar full. Personal variations in the selection and quantity of ingredients are expressly welcome. As a marinade for a smaller amount of grilled meat, simply combine 2 teaspoons of the mixture with 2 tablespoons of olive oil, 1 tablespoon of lemon juice and, if desired, crushed garlic, and brush it onto the meat of your choice. The mixture is also ideal as a rub for pulled pork. If using it for this purpose, first brush the meat thinly with a mixture of finely pureed garlic, a little olive oil and mustard before sprinkling the spice powder over it. The spice is also suitable for grilled chicken or minced meat dishes, such as stuffed peppers. Tip: If you can get hold of it, I really recommend using smoked paprika; it’s a really delicious ingredient.
