Fish patties

Ingredients for 12 servings:

  • 600 g fish fillet(s)
  • 2 medium-sized onions, finely chopped
  • 50 g butter
  • 200 g quark, preferably dry
  • 1 egg(s)
  • 2 tbsp semolina (wheat semolina)
  • some salt and pepper
  • spice(s) as desired
  • 200 g white bread / breadcrumbs, for breading
  • 1 egg(s)
  • 1 tsp milk
  • 2 tbsp flour
  • Salt, to taste
  • some vegetable oil for frying

Instructions

Working time approx. 1 day 6 hours; Rest time approx. 20 hours; Total time approx. 2 days 2 hours

Russian cuisine

Fry the onions in butter until translucent. Chop the fish as finely as possible (you can use a meat grinder if you have it). Add the onions, fish, egg, and quark. Season with salt and pepper. Add the semolina, mix well, and let stand for about 15-20 minutes. For the breading, mix the egg, milk, and salt together. Place the breadcrumbs and flour in separate bowls. With wet hands, form patties, roll them in the flour, dip them in the egg mixture, and lightly press the breadcrumbs into the patties. Heat the oil in a pan and fry the patties over medium heat until golden brown.
