Fish: Salmon Meatloaf

- 500 g Salmon fresh
- 50 g Whole grain breadcrumbs
- 1 piece Fresh onion
- 1 tablespoon Extra virgin olive oil
- 2 piece Free range eggs
- Salt and pepper
- 1 branch Fresh tarragon
- 3 Branches Fresh dill
- Peel the salmon if necessary and chase it through the coarse disk of the meat grinder.
- Peel the onion, dice it finely and sauté in a little olive oil until translucent. Pluck the herbs from the stalks and finely chop them.
- Mix the breadcrumbs with the eggs, the steamed onion cubes, salt and pepper and the chopped herbs.
- Distribute the twisted fish meat evenly under this mixture.
- Grease a loaf pan generously and pour in the fish mixture. Cover with foil and bake for 30 minutes at approx. 200 degrees in a preheated oven. Then cover and place under the grill for another 5 – 7 minutes.
- Serve with boiled potatoes and dill sauce.
