Ingredients for 1 servings:

  • 200 g flour
  • 100 g cornstarch
  • 200 g butter
  • 100 g sugar
  • 2 packs of vanilla sugar, bourbon
  • 1 pinch of salt
  • 1 m.-sized egg(s)
  • some lemon zest, grated
  • 50 g ground almonds
  • 50 g pistachios, ground
  • 30 g chopped pistachios
  • Powdered sugar mixed with some vanilla powdered sugar

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

makes about 100 small croissants

Place flour, sugar, vanilla sugar, salt, lemon zest, almonds, and pistachios on a baking sheet, make a well, and add the egg. Add small pieces of butter on top. Quickly knead everything into a dough and chill for 60 minutes. Roll the dough into a log, cut into 1 cm long pieces, and shape them into croissants. Sprinkle with chopped pistachios and gently press them down. Place on a baking sheet lined with baking paper and bake in a preheated oven at 175°C for about 10-12 minutes. Allow to cool slightly and dust with sifted powdered sugar/vanilla powdered sugar. One recipe yields 110 croissants. However, I bake very small croissants.
