Ingredients for 1 servings:

  • 100 g spelt flakes or oat flakes, fine
  • 50 g wholemeal spelt flour or almond flour
  • 150 g low-fat curd cheese
  • ½ pack of baking powder
  • 1 pinch of dry yeast
  • 1 handful of flax seeds or chia seeds
  • Salt
  • possibly milk
  • 1 egg yolk

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 25 minutes

Mix all of the listed ingredients, except the egg yolk. If the dough is too sticky, add a splash of milk. Then, using a tablespoon, form small rolls and place them on a baking sheet—it’s actually easier than you think. Brush the rolls with the egg yolk. If you like, you can sprinkle a few seeds or grains on top. Bake in the oven at 180°C (top/bottom heat) for 20–25 minutes. I baked them at 180°C (convection oven) for 20 minutes, and they were still a bit sticky on the inside, but that’s a matter of taste. They’re delicious with savory toppings, but also with jam, etc. Note from Chefkoch.de: Because flaxseed contains a relatively high amount of cadmium, the German Federal Center for Nutrition recommends no more than 20 g of flaxseed per day. Your daily bread consumption should be adjusted accordingly.
