Ingredients for 1 servings:

  • 2 stalk(s) cinnamon, (cassia bark)
  • 6 pieces star anise
  • 1 tbsp cloves, whole
  • 1 tbsp fennel seeds
  • 1 tbsp anise or Szechuan pepper or black peppercorns

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Break the cassia bark into several pieces. Grind all the spices into a fine powder in a food processor or mortar and pestle. Transfer to a sterilized jar, seal, and label. Variations: You can use another cinnamon stick instead of cassia, but use a little more, as it is milder. Cassia bark, however, is often found in Asian stores.
