Flambéed Pigs – Kidneys

The perfect flambéed pigs – kidneys recipe with a picture and simple step-by-step instructions.

  • 250 g Pig kidneys
  • 1 Red onion
  • 2 tbsp Brandy
  • 1 Orange
  • Oil
  • Pepper from the grinder
  • Salt
  1. The kidneys are, as always, from the butcher I trust, who heroically prepares them perfectly ready to cook.
  2. Cut the onion, squeeze the orange.
  3. Fry the kidneys and onions in a little oil.
  4. Chantre to light it up.
  5. Deglaze with orange juice.
  6. Season to taste with pepper and salt.
