Floating dumplings

Ingredients for 4 servings:

  • ⅛ liter milk
  • 1 tbsp butter or margarine
  • 60 g flour
  • 1 egg(s)
  • 1 pinch(s) of sugar
  • 1 pinch of salt
  • nutmeg

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Bring the milk and fat to a boil and stir in the flour. Stir the mixture on the stove until it starts to separate from the pan. Transfer to a bowl to cool. Gradually mix in the eggs, a pinch of sugar, salt, and freshly grated nutmeg. Form dumplings and simmer in hot, salted water for about five minutes, then stop boiling. The cooked dumplings will float to the surface. Remove the dumplings with a slotted spoon and add them to the soup. Variation: To make cheese dumplings, add 1-2 tablespoons of grated cheese to the milk.
