Flour dumplings, Franconian style

Ingredients for 2 servings:

  • 500 g flour
  • 375 ml milk
  • 2 eggs
  • 5 rolls
  • 1 tsp salt
  • Fat

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Combine flour, salt, and milk, then add eggs. Beat the batter until bubbles form (this will make the dumplings nice and fluffy). Cut the rolls into small cubes and toast them in the oil until golden brown. Mix the toasted bread cubes into the batter. Scoop out dumplings with a large spoon and place them in boiling salted water. Cover and simmer for about 25-30 minutes. When the dumplings have grown large and float to the top, they are ready. This quantity makes 4 dumplings.
