Ingredients for 4 servings:
- 500 g flour
- 4 eggs
- 125 g quark
- 100 ml milk
- salt and pepper
- 1 stale roll
- 200 ml cream
- 100 ml milk
- 1 cube of stock, fat
- nutmeg
- Maggi
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Mix flour, eggs, quark, salt and pepper to taste, a little nutmeg and Maggi, and 100-150 ml of milk (depending on consistency) with a mixer and dough hook until you have a smooth dough. Bring a pot of salted water to a boil. Use a tablespoon to scoop the dough into the boiling water, dipping the spoon with the dough into the water; the knob will then detach from the spoon by itself. Let the water continue to boil over low heat with the knobs in place. When cooked, the knobs will float to the top. Place them in a bowl with a ladle. Cut the stale bread roll into small cubes and toast them in a pan with a little fat. Mix 200 ml of cream with 100-200 ml of milk and bring to a boil over low heat with a stock cube. Add a little Maggi or other seasoning to taste. Be careful, it boils over very quickly and this mixture can damage the ceramic hob if it burns in. Pour the toasted bread cubes and sauce over the knobs. Applesauce or green salad go well with the flour dumplings.
