Flourless chocolate nut cake

Ingredients for 1 servings:

  • 200 g dark chocolate with 80% cocoa content
  • 8 eggs
  • 150 g butter or margarine, room temperature
  • 150 g sugar, brown
  • 250 g hazelnuts, ground
  • 150 g breadcrumbs
  • some powdered sugar for sprinkling
  • possibly milk
  • Butter, for the mold
  • Breadcrumbs, for sprinkling

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

Breadcrumbs are used instead of flour

Grate the chocolate and separate the eggs. Beat the egg yolks with the sugar and butter until fluffy. Add the ground hazelnuts, grated chocolate, and breadcrumbs and mix well. Beat the egg whites until stiff peaks form and fold into the batter. If the batter is too dry, add a little milk. Grease a loaf pan with butter and sprinkle with breadcrumbs. Pour in the batter and bake at 180°C (160°C fan-assisted oven) for about 50 minutes. Once cooled, sprinkle with powdered sugar.
