Fluffy Lemon Cake

Ingredients
 

  • 200 gr Butter
  • 200 gr Sugar
  • 2 Pc. Lemons that have been rubbed off. Zest and juice
  • 4 Eggs size M
  • 300 gr Flour
  • 80 gr Food starch
  • 1 packet Baking powder
  • 6 tbsp Lemoncurd, I'll say something about that in the recipe
  • 150 gr Powdered sugar

Instructions
 

  • Mix the room temperature butter with the sugar and the grated lemon zest with the mixer until frothy. Stir in the eggs one at a time.
  • Mix the flour, starch and baking powder together. Stir alternately with the juice of a lemon and the lemon curd into the egg and sugar mixture.
  • Grease the baking sheet and dust with flour. Spread the dough on top. Bake in the preheated oven at 175 ° C for approx. 15 minutes. Let cool down briefly. Then mix the powdered sugar with the rest of the lemon juice to make a smooth glaze. Brush the cake with it as you please. (I wanted to make a smiley, but unfortunately couldn't get out ...)
  • I wanted to say something about Lemoncurd: this is an English. Spread, not available everywhere. I found it when I bought it again / Edeka. The company is called Chiver`s and has a lot of varieties. There are many do-it-yourself recipes on the Internet, but that was too much work for me. And in retrospect, in my opinion, it's not worth the effort. The finished one is very tasty.
