Ingredients for 1 servings:
- 1 ½ tsp dry yeast
- 120 ml water
- 120 ml milk
- 1 tbsp butter, soft
- 1 tbsp sugar
- 2 tsp salt
- 360 g flour
- 1 ball of mozzarella
- 1 tomato(s) or dried in oil
- 2 tsp salt
- 6 tbsp olive oil
- 2 garlic cloves
- some salt
- pepper
- 1 handful of basil or more
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours 20 minutes
With tomato and mozzarella
For the dough, gently warm the milk and water with the sugar, dissolve the yeast in it and let it swell briefly. Place all the remaining ingredients in the food processor, add the yeast mixture and knead everything thoroughly. Let it rest in a warm place for 1 hour. In the meantime, make the basil and garlic oil. Wash and finely chop the basil. Make a garlic paste, finely chop the garlic, add a little salt and mash it with the edge of a knife until a paste forms. Mix everything together with the oil. Season with salt and pepper. Dice the mozzarella and tomato. Preheat oven to 200°C (fan oven). Grease a loaf pan. Roll out the dough into a rectangle, brush with the basil oil, cut into 5 cm wide strips, fold these together like an accordion and place in the greased loaf pan. Let it rise for another 20 minutes. Sprinkle the mozzarella and tomato pieces over the top and bake in the oven for 25-30 minutes.
