Fooled Sweet Potato Soup
The perfect fooled sweet potato soup recipe with a picture and simple step-by-step instructions.
- 1000 g Sweet potatoes, orange / peeled and roughly diced
- 350 g Apples, peeled and diced
- 100 g Carrot, peeled and diced
- 50 g Onion, diced
- 1 piece Garlic clove, large and finely diced
- 2 tablespoon Freshly grated ginger
- 1 tablespoon Honey, liquid
- 1 teaspoon Curry, hot
- 2 tablespoon Apple Cider Vinegar
- 2 tablespoon Olive oil
- 1000 Milliliters Broth or water; maybe less than a liter
- Salt and pepper, crème fraîche if you like
- Heat the olive oil in a large saucepan. Add the diced potatoes and carrots and let sweat, stirring occasionally. Then add onion, garlic and ginger and let sweat for another 5 minutes.
- Add honey, pepper, curry and apple cider vinegar to the saucepan, stir everything. Pour in the broth until everything is just covered and bring to the boil with the lid on. Then cook on a low heat for about 30 minutes. (If you use broth, leave out the salt for now; it can be seasoned.)
- When the vegetables are done, puree everything with a hand blender to the desired consistency. Season to taste and, if necessary, add seasoning. Arrange in bowls and garnish with crème fraîche if necessary. Good Appetite.
