Ingredients for 2 servings:
- 2 trout(s), approx. 350 g each
- lemon juice
- Salt
- Pepper, white from the mill
- Clarified butter, for the mold
- 4 tomatoes
- 2 tbsp breadcrumbs
- 2 tbsp Parmesan
- some butter
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Wash and dry the fish thoroughly. Rub inside and out with lemon juice, season with salt and pepper. Make 3-4 small cuts in the thickest part to ensure even cooking. Place in two greased gratin dishes. Wash the tomatoes and cut them crosswise. Mix together the breadcrumbs, butter, and cheese and place them on top of the tomatoes. Add to the dish. Place under the preheated grill in the oven and grill for 10-12 minutes, turning the fish over halfway through. I serve this with a green salad and toasted white bread.
