French Fries
The perfect french fries à la biggi recipe with a picture and simple step-by-step instructions.
- Waxy potatoes
- Coarse salt
- Espelette pepper
- Frit oil
- Biskin
Prepare potatoes
- Peel the potatoes and cut into thick sticks. I don’t do this with a ruler because I really like the irregularities on the plate. The sticks are now parboiled for 10 minutes – so that they are really hot and pre-cooked. Now drain and fry. To do this, you have to preheat your deep fryer to 190 degrees. Now add the fries and pre-fry for about 6-8 minutes.
for immediate use
- leave the fries in the fryer until they are crispy and brown. This takes about 3-5 minutes (depends on the thickness of the pen).
for storage (freezing)
- As soon as the fries are yellowish brown and a slight crust begins to form on the edge, they are ready to be frozen. So if you want to make a supply, let the fries drain very well and cool down. Then fill into appropriate containers or bags and place in the shock freezer compartment. If they are properly frozen, they can be stored at -8 degrees for at least 6 months.
Pre-fried use
- If necessary, take the appropriate amount of frozen fries out of the containers (close the container tightly again) and cook in the 190 degrees hot frit fat / frit oil for 5-8 minutes until crispy brown.
- I like to add a salt mixture with Espelette pepper to flavor the finished fries.
