French Onion Pasta

Ingredients for 3 servings:

  • 300 g pasta, e.g. farfalle
  • 3 large onions, cut into thin half rings
  • 3 garlic cloves, chopped
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 2 tsp brown sugar
  • 500 ml beef stock or vegetable stock
  • 200 ml cream
  • 2 tbsp Worcestershire sauce
  • 200 g Emmental cheese, grated
  • some salt and pepper
  • some thyme, fresh

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

a creamy pasta dish with the sweet taste of caramelized onions and melting Emmental cheese

Heat olive oil and butter in a large pot or deep frying pan over medium heat. Add onions and cook, stirring occasionally, for about 20-25 minutes, until golden brown and caramelized. Add garlic and brown sugar to the onions and cook for another 2 minutes. Add pasta and coat with the stock. Mix everything well and bring to a boil. Simmer pasta until al dente and most of the liquid is absorbed, stirring occasionally. When the pasta is tender, add cream and Worcestershire sauce and mix well. Mix the grated cheese into the pasta and season with salt and pepper. Divide the French Onion Pasta among plates, garnish with fresh thyme, and serve.
