Fresh Asparagus with Ham and Almond Balls

The perfect fresh asparagus with ham and almond balls recipe with a picture and simple step-by-step instructions.

Fresh asparagus:

  • 900 g Fresh asparagus (14 stalks)
  • 1 tsp Salt
  • 1 tsp Sugar
  • 1 tbsp Butter
  • 1 piece Lemon

Ham:

  • 4 Discs Prague ham approx. 100 g
  • 6 Discs Holstein ham bacon air-dried approx. 100 g

Almond balls:

  • 200 g Almond balls frozen (10 pieces)

Sauce:

  • 1 packet Hollandaise 300 ml
  • 2 tbsp Cream
  • 1 tsp Lemon juice
  • 1 pinch Sugar

Serve:

  • 2 Radish
  • 2 Pointed mint

Fresh asparagus:

  1. Peel the asparagus, cut off the woody ends, cook in salted water (1 teaspoon salt) with sugar (1 teaspoon), butter (1 tbsp) and lemon (1 piece) for about 8-10 minutes until al dente and remove.

Ham:

  1. Roll up the ham slices and place on 2 plates.

Almond balls:

  1. Place the almond balls without thawing on a baking sheet lined with baking paper and bake / bake in a preheated oven at 180 ° C for approx. 18 – 20 minutes. Turn it every now and then.

Sauce:

  1. Pour the hollandaise sauce into a small saucepan, refine with cream (2 tablespoons), lemon juice (1 teaspoon) and sugar (1 pinch) and heat slowly.

Serve:

  1. Serve asparagus with ham, almond balls and sauce, garnished with a radish and mint tip.
