Smörrebröd with Matjes (Andrej Mangold)
The perfect smörrebröd with matjes (andrej mangold) recipe with a picture and simple step-by-step instructions.
Shot:
- Pepper
- 4 disc Strong grain bread
- 50 g Butter at room temperature
- 4 Pc. Radish
- 1 Pc. Granny Smith apples
- 8 Pc. Double fillets of small Dutch herring
- 1 Pc. Onion red
- 30 g Chopped dill
- 4 tbsp Rapeseed oil
- 2 tbsp Champagne vinegar
- 0,5 Pc. Lemon, juice and zest
- 1 tsp Sugar brown
- 1 tbsp Freshly chopped chives
- 300 g Garden cucumber
- 0,5 Pc. Lemon, juice and zest
- 1 Splash Champagne vinegar
- 1 Splash Apple juice
- 120 g Yogurt 3.5% fat
- 50 ml Gin (mild)
- Slice the radishes very thinly. Cut a quarter of the apple into thin slices and set aside.
- Cut the remaining three quarters of Granny Smith into fine cubes. Dice the red onion very finely, finely dice the herring. Finely chop the dill, mix all ingredients except for the apple and radish slices with rapeseed oil, champagne vinegar, brown sugar and chives and season with salt and pepper.
- Lightly butter the bread on one side. Top with the tartare and garnish with radish slices, apple wedges and dill tips.
- For the shot, wash the cucumber and roughly dice it. Mix finely with all other ingredients and season with salt and pepper. Pass through a sieve and serve with the Smörrebröd in a glass!
