Ingredients for 4 servings:
- 500 g gnocchi
- 1 small onion(s)
- ½ bell pepper(s)
- 10 cherry tomatoes
- 5 tomatoes, dried in oil
- 1 bunch arugula
- 1 pack of feta cheese
- 2 tbsp pine nuts
- 1 shot of balsamic cream
- olive oil
- salt and pepper

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Finely dice the onion. Dice the bell pepper, sun-dried tomatoes, and feta cheese. Quarter the cherry tomatoes. Lightly toast the pine nuts in a pan without oil. In a bowl, combine three tablespoons of the sun-dried tomato oil with a dash of balsamic vinegar and olive oil. Season with salt and pepper. Mix in the prepared ingredients. Fry the gnocchi in a pan with a little oil. Then toss the arugula into the dressing. Serve the salad lukewarm and can be served as a side dish to all kinds of dishes.
