Wash the mint sprigs thoroughly and twist the entire bunch in your hand, as if wringing a towel. It’s best to pour this into a teapot with a strainer spout. Cut the unpeeled ginger into thin slices and add it to the teapot. If you like, add a little lemon juice or zest to taste. Pour boiling water over the teapot and let it steep on a teapot warmer for about 10 minutes. Sweetened with honey, this is the perfect tea for cold days.
