Ingredients for 4 servings:
- 300 g mushrooms, fresh mixed. Porcini mushrooms, button mushrooms, possibly chanterelles
- 1 lemon(s)
- 1 bunch parsley, flat
- 1 egg yolk
- 1 clove(s) garlic
- 100 ml extra virgin olive oil
- Sea salt
- Pepper, from the mill
Instructions
Working time approx. 35 minutes; Total time approx. 35 minutes
Clean fresh mushrooms; slice thinly, and drizzle with a little lemon juice. (Briefly fry the chanterelles.) Whisk 1 egg yolk with salt, pepper, and the remaining lemon juice. Squeeze in 1 garlic clove. Gradually add 100ml olive oil, stirring constantly. Finely chop the parsley and mix in. Season the sauce to taste and drizzle over the mushrooms.
