Fresh pineapple chutney

Ingredients for 8 servings:

  • 1 small pineapple (approx. 700 g)
  • 1 onion(s)
  • 3 tbsp vinegar (white wine vinegar)
  • 2 red peppers
  • 2 green peppers

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Peel and quarter the pineapple, removing the hard core. Finely dice 3/4 of the pineapple, place it in a sieve, and let it drain, reserving the juice. Dice the remaining pineapple, puree it, and press it through a cheesecloth, reserving the juice. Peel and finely dice the onion. Boil it in an uncovered saucepan with the pineapple juice and vinegar until 100 ml of liquid is reduced. Meanwhile, halve the peppers lengthwise, trim them, and cut into tiny cubes. Mix the pineapple cubes with the reduced juice and peppers, cover, and refrigerate until ready to serve.
