Ingredients for 4 servings:
- 500 g asparagus
- 8 eggs
- 200 g bacon, diced
- 50 g butter
- salt and pepper
- chili powder
- Herbs, e.g. chives, parsley
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Peel the asparagus and cut thin asparagus into approximately 2 cm long pieces; cut thicker asparagus diagonally into 1 cm thick slices. Whisk the eggs and season to taste. Melt the butter in a pan; use more butter if you like, otherwise the scrambled eggs will be too dry. Add the asparagus to the melted butter and fry until al dente and browned. We like our asparagus cooked through, so we fry it in the butter for about 10 minutes. While it’s frying, add the diced bacon and fry it along with the asparagus. Once the asparagus has the desired consistency and color, add the beaten eggs and fry like scrambled eggs, stirring until the eggs are cooked to your liking. Serve with some fresh bread and garnish with fresh herbs.
