Fried asparagus with orange vinaigrette

Ingredients for 2 servings:

  • 500 g asparagus, peel the green part in the lower third
  • 2 tbsp orange juice
  • 1 tbsp lemon juice
  • ½ tsp orange peel, grated
  • 1 tsp sugar
  • 1 pinch of mustard seeds, ground
  • 2 tbsp olive oil
  • ½ bunch chervil, finely chopped
  • ½ bunch chives
  • ½ bunch parsley
  • 1 tomato(s), diced
  • salt and pepper
  • Sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Blanch the asparagus with salt and sugar for 3 minutes and drain. Combine all ingredients and let stand for a while. Halve the asparagus lengthwise and fry in a pan (cook until cooked). Serve the asparagus and drizzle with the vinaigrette. Serve with herb pancakes. Mix regular pancake batter with half a bunch of each of the herbs listed above and fry until thin.
