Ingredients for 2 servings:
- 500 g asparagus, peel the green part in the lower third
- 2 tbsp orange juice
- 1 tbsp lemon juice
- ½ tsp orange peel, grated
- 1 tsp sugar
- 1 pinch of mustard seeds, ground
- 2 tbsp olive oil
- ½ bunch chervil, finely chopped
- ½ bunch chives
- ½ bunch parsley
- 1 tomato(s), diced
- salt and pepper
- Sugar
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Blanch the asparagus with salt and sugar for 3 minutes and drain. Combine all ingredients and let stand for a while. Halve the asparagus lengthwise and fry in a pan (cook until cooked). Serve the asparagus and drizzle with the vinaigrette. Serve with herb pancakes. Mix regular pancake batter with half a bunch of each of the herbs listed above and fry until thin.
