Fried banana in coconut coating

Ingredients for 4 servings:

  • 4 bananas
  • 2 tbsp desiccated coconut
  • 4 tbsp lemon juice
  • 4 tbsp oil, neutral, also peanut oil
  • e.g. Calvados

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 14 minutes

a quick and versatile dessert, also good flambéed

Peel the bananas and halve them lengthwise. Drizzle with lemon juice and coat with coconut flakes. Heat oil in a pan and fry the bananas over medium heat for one minute on each side until the coconut flakes begin to brown. Optionally, add 4 tablespoons of warmed Calvados and flambé. Serve with vanilla ice cream, fruit puree (e.g., kiwi), fruit rice, or similar.
