Fried Bockwurst with rice and pepper-onion-cream cheese vegetables

Ingredients for 2 servings:

  • 2 frankfurters
  • 125 g brown rice
  • 200 g bell pepper(s), red
  • 1 onion(s), red
  • 100 g cream cheese
  • 1 tsp sea salt
  • ½ tsp black pepper
  • 1 tsp sweet paprika powder
  • 1 tbsp soy sauce
  • 150 g homemade vegetable broth
  • Sunflower oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Cook the rice according to the package instructions, drain, and keep warm. Deseed and remove the white core from the peppers, cut into strips, and finely dice. Peel the onion, quarter it lengthwise, and cut it into strips. Fry both in a pan with oil for 5 minutes. Then add the spices, cream cheese, and vegetable stock. Bring to a boil and simmer over medium heat for 10 minutes, stirring occasionally. Season to taste. Meanwhile, fry the sausages until browned to your liking. Serve everything together.
